USE CASE: INTERNATIONAL CULINARY COLLABORATION FOR APPRENTICES THROUGH VIDEO.

In this article, we present one of our favorite use cases, which also earned us the Edtech Trophies in March 2022 for the international category. This innovative, even pioneering project was carried out by the Faculty of Trades at the Hotel School of Cannes and Alba Accademia in Italy.

This project, named IMPACT, began in 2015 and is a cooperative project co-funded by the European Union as part of the INTERREG ALCOTRA France-Italy 2014-2020 program.

Its goal is to aid youth employment in the Italian-French region by developing a new way of teaching and training using digital technology and mobility.

The inception of the IMPACT project

The adventure began in 2015. The culinary academy of Alba, Italy, secured European funding and contacted Mr. Pons, then in charge of the culinary apprenticeship program in Cannes.

Apprenticeship, as understood, does not exist in Italy, yet the Italian school wishes to establish such a training program, drawing inspiration from the French model.

Thus, the two schools embarked on their collaboration. Following numerous exchanges and meetings, from Cannes to Alba, joint classes were established, both in-person and remotely through live-streamed videos from one country to another.

IMPACT appealed to French apprentices, providing them the opportunity to collaborate with their Italian counterparts. For the past three years, they have been exposed to a new culinary culture and a different pedagogy that stimulates them.

Kalyzée joined the project in 2018. Upon discovering the call for bids from the Cannes school, Stéphane Barbati visited the location to propose the Kast solution. To collaborate with Italy, the lecture halls and kitchens needed a user-friendly video capture system to transmit their training remotely.

Numerous hours of practice were filmed and broadcasted in Italy, and now even in other countries! The project evolved over the years to include courses with Japan, for example. Apart from significant time zone differences, implementing such practices demands substantial adaptation on both sides. Apprentices learn to adapt to new pedagogy, new culture, which is highly enriching for them.

We love this use case as it interconnects several schools worldwide to share knowledge. Well well, doesn't this align with our mission at Kalyzée?

Implemented equipment

To realize this project, the Faculty of Trades at the Hotel School of Cannes needed to adapt its audiovisual equipment. The challenge: to film a practical class and broadcast it live or recorded elsewhere. The hurdle? Proposing a simple solution accessible to trainers and integrating it into a culinary lab!
IMPACT

Two cameras were installed in the school's kitchen: the first offers a wide-angle view of the room, the second a closer view of the workstations.

Sound is recorded using a lapel microphone worn by the chefs. An amphitheater was also equipped. A camera was placed at the back to record lectures from a wide angle. A second camera was positioned at the platform level to film the practical part: the trainer's technical gestures.

Results three years later

Mobility: An opportunity for apprentices

In addition to video courses, apprentices are invited to visit partner schools. These young people, many of whom have never left French territory, had the chance to visit Alba, Italy, and also host their Italian counterparts. Unfortunately, the Covid-19 crisis prevented some trips, such as the one planned to Japan during the last lockdown in France. Nevertheless, the project remains a success, even remotely.

Encouraging results

An independent organization evaluated the project to determine areas of improvement and the success of the experience. The results of this evaluation are highly encouraging. Since the project's inception, the percentage of apprentices continuing their training after obtaining their CAP (certificate of professional competence) has risen to 40%, compared to just 10% previously.

Furthermore, the surveyed apprentices, whether from Italy or France, are generally very positive about their experience. Superior academic results are also observed among apprentices who participated in the IMPACT project compared to those outside of IMPACT training.

Ultimately, IMPACT has already attracted over 80 students, with about twenty teachers trained in streaming apprenticeship. A true success, now in its third year.
