The hospitality training center in the city of Cannes now offers its courses through elearning.
Thanks to the Franco-Italian program IMPACT, two culinary schools have embraced culinary elearning. Two chefs take turns teaching, one focusing on French cuisine and the other on Italian cuisine. This is a professional and practical education conducted both in-person and remotely. The French chef teaches to both his local French students and the Italian students who are remote. Everyone prepares the recipe simultaneously. The same process occurs when the Italian chef takes over the following week.
This is the first innovative initiative that combines practical in-person and simultaneous remote education, which could be called "Blended Professional Training in Streaming" or "Live Blended Learning."
Practical elearning marks a true evolution in education that stands in contrast to traditional classes.
For this unique form of elearning, the medium of knowledge transmission is streaming video. Each step of a recipe includes a filmed explanation by the chef, followed by the students' hands-on application. An interpreter translates the French chef's instructions for the Italian students.
To create this elearning content, Kalyzée brought in its technology for automated video capture. For the French portion, they used a KAST CLASSIC box, which includes a fixed camera and a programmable PTZ camera. The fixed camera provides close-up shots of the work area and the chef's hands to facilitate learning of technical gestures. Sound is captured using a wireless lapel microphone. Control is managed through an iPad with a waterproof protective cover. Two TV screens are present to display the broadcasted images and the questions from remote students.

IMPACT is a cross-border cooperation project co-financed by the European Union under the INTERREG ALCOTRA France-Italy 2014-2020 program. The project aims to develop a cross-border training program in the tourism and hospitality sector. It involves students from the Alba Accademia and Apro Formazione, as well as apprentices from the Faculty of Métiers Ecole Hôtelière de Cannes.
